SuperPower Berry Berry Chip Muffins

I call these muffins superpower because they have multiple sources of high quality power ingredients. Great for a New Years Day brunch or anytime you need the energy to renew your life!


2 1/4 flour

1 cup honey

1/4 cup olive oil

1/3 cup butter, room temp

2 1/2 teaspoons baking powder

2 teaspoons vanilla

1 teaspoon, fresh ginger root, grated

1/2 teaspoon baking soda

1/2 teaspoon salt

2 eggs, lightly beaten

1 cup blueberries

1 cup raspberries

1 cup blackberries

1 cup dark chocolate chips or pieces

Streusel Topping

1 stick of butter, room temp

1/4 light brown sugar

1/4 cup flour

1/4 cup walnuts

Makes a dozen large muffins.

Preheat oven to 350 degrees. Mix flour, baking soda, baking powder and salt in a medium bowl and set aside. In a large bowl or mixer bowl beat butter, oil and honey on medium speed until mixed well. Add eggs and beat well. Add flour mixture, vanilla and grated ginger root until combined. Fold in berries and dark chocolate chips and pour batter into muffin pan, filling each until filled. Prepare streusel topping by mixing all ingredients in a large bowl. Sprinkle streusel mixture over muffins batter and bake muffins for about 35 minutes or until toothpick comes out clean.
